1/2 doz duck eggs
avocado
cherry tomatoes
basil
red onions
lemons
Poblano peppers
zucchini
spinach
strawberries or blueberries

This week’s recipe:
Avocado Toast with Fried Duck Egg
Prep Time: 5 minutes Cook Time: 10 minutes Total Time: 15 minutes Servings: 2
Quick and easy mashed avocado spread on toast topped with a fried egg with a runny yolk!

Ingredients
1 avocado
1 tablespoon lemon juice (or lime juice)
pinch salt
4 eggs
4 slices toast
salt and pepper to taste
directions
Mash the avocado, lemon juice and salt.
Fry the eggs in a pan over medium heat.
Spread the mashed avocado mixture on the toast, top with the fried eggs, season with salt and pepper, top with cherry tomatoes, and enjoy!

Option: Add basil or cilantro or other herb to the avocado mixture.
Option: Add jalapeno or hot sauce!
Option: Add bacon!
Option: Add parmesan or queso fresco, either sprinkled on top or mixed into the avocado!
